Spinach Rice

A lot of you were asking for this recipe when I shared my pan fried sea bass with chipotle cream sauce recipe so here it is! 

Make this with any leftover rice to make it more nutritious and flavourful.

Spinach Rice

Ingredients

  • 1 tbsp of olive oil

  • 250g of cooked rice

  • 250g of spinach

  • 1x Shallot, finely dice

  • Pinch of salt and black pepper

  • 300 ml vegetable stock

Directions

  • In a sauté-pan heat the oil, add shallots sauté until soft.
  • Add the spinach and cover the pan and cook the spinach 2 minutes.
  • Pour the rice, stock, salt and pepper inside the spinach.
  • Cook until the liquid is reduced, which should take around 5-10 minutes.

  • Makes 4 portions.
