A lot of you were asking for this recipe when I shared my pan fried sea bass with chipotle cream sauce recipe so here it is!
Make this with any leftover rice to make it more nutritious and flavourful.
Spinach Rice

1 tbsp of olive oil
250g of cooked rice
250g of spinach
1x Shallot, finely dice
Pinch of salt and black pepper
300 ml vegetable stock
Directions
- In a sauté-pan heat the oil, add shallots sauté until soft.
- Add the spinach and cover the pan and cook the spinach 2 minutes.
- Pour the rice, stock, salt and pepper inside the spinach.
- Cook until the liquid is reduced, which should take around 5-10 minutes.
