Pan-seared Steak & Peppercorn Sauce

Being so cooped up together has been a lot for everyone, so I took the opportunity as soon as I could to spend some quality time with my husband (without the kids).

I wanted to do something simple and romantic – just for us – so I thought, why not share this base recipe with you so that you can make it your own.

A few tips to help set the mood:

  • Make it something to share – I presented the food on a cutting board and left the sauce on the side so that we can pour as much or as little as we wanted.
  • Choose your own accoutrements so that you’re eating what you like with it, something to dip and share with each other.
  • A glass of wine to celebrate yourselves and that you made it through lockdown !
  • Music and candles… of course πŸ™‚

Pan-seared Steak & Peppercorn Sauce

Ingredients

  • 2-3 tsp of black peppercorns

  • 6oz steak (per person), get the cut you prefer

  • 1 tbsp olive oil

  • A pinch of salt

  • FOR THE PEPPERCORN SAUCE
  • 2 tbsp unsalted butter

  • Half a shallot or white onion, minced

  • 60ml red wine

  • 125ml beef stock

  • 60ml cooking cream

Directions

  • Season the steak with the salt and pepper, and heat the pan.
  • Add the oil and when it’s hot (a little bit of smoke), sear the steak each side for 2 minutes.
  • Once that’s done, place it to one side and cover with aluminium foil.
  • In the same pan, melt butter over medium heat, fry shallot until softened, about 1 minute.
  • Add the wine and increase the heat to medium-high and cook until the sauce is reduced by half.
  • Add the stock and cook until reduced by half, then add the cream simmer until thickened.
  • Pair the steak with any vegetables of your choice, carrots, broccoli, green beans, potatoes, anything!
