I’ve been making this chicken lasagne for some of my neighbours recently and it’s such a big favourite that everyone has been asking for the recipe! With Christmas approaching, I thought it would be a good recipe to share if you’re not so fussed about making Christmas themed food but still need something quick and tasty that will feed a lot of people AND that they’ll all enjoy!

- Lasagne
1x Onion, finely chopped
1-2 Cloves of garlic, finely chopped
1-2 tbsp Olive oil
400g Ground chicken
400g Tomato sauce, passata
Pinch of salt & pepper
2x Eggs
250g Ricotta cheese
250g Cottage cheese
40g Parmasean cheese, grated
500g Pasta sheets
- Topping
400g Mozzarella and parmesan cheese, grated for the topping

- Heat the oil in a saucepan and add the garlic and onion and sweat until the onion is a bit brown.
- Add the ground chicken along with the salt and pepper and stir to break up lumps. Cook until there’s no pink left and the meat is ready (approx 10-15 minutes).
- Add the tomato sauce and let it cook for about 10 minutes until you can see steam rising.
- In the meantime, mix together the ricotta cheese, cottage cheese and parmesan, and eggs. Season well with salt and pepper.
- Ladle the chicken sauce into your lasagne tray and spread it across the bottom of the tray.
- Arrange a layer of pasta in the pan, add a layer of cheese mixture and repeat chicken then pasta, cheese, etc until all the ingredients are used up. Top with the grated mozzarella and parmesan cheese.
- Cover lightly with foil and bake at 375F or 190C for about 45 minutes. Remove the foil for the last 15 minutes of baking time.
- Serve with salad or you can add any vegetables you want when you add the tomato sauce frozen vegetables like peas and carrots, leafy greens etc.
