Easy Grilled Salmon

The best thing about fish (apart from all the nutrients you get from eating it) is that it’s easy to cook AND make it taste good. Perfect for lockdown when you need to get something on the table that’s healthy and doesn’t involve a lot of pre-planning. 

Tip: Put your fish in the freezer as soon as you get it from the market and only take it out the day you’re going to use it. This helps to keep the fish fresh for whenever you need it. 

Easy Grilled Salmon

Ingredients

  • 750g of salmon fillets

  • 2 tbsp of olive oil

  • 2 cloves of garlic (minced)

  • 2-3 branches of fresh rosemary

  • Pinch of salt & black pepper

  • 2 wedges of lemon

Directions

  • Combine the oil, garlic, rosemary, salt and pepper and rub it all over the salmon.
  • Transfer to a dish, cover and leave to marinade in the fridge for up to 30 minutes.
  • Grill the fish skin side up over a medium-high heat for about 20 minutes.
  • Serve immediately with the lemon wedges for extra zing!

What can you eat this with?

Mashed potatoes & greens, potato chips & peas, pair it with my spinach rice or a simple salad… whatever you want!
