Fettuccine Alfredo

Pasta is one of those dishes that is super simple to cook and I’m sure you cook it all the time, so I wanted to give you an alternative recipe to what you usually make. It’s pretty straightforward and as my friend told me – “Now I know how the pros make pasta tasty.”  – Merci!

Fettuccine Alfredo

Ingredients

  • 250ml heavy cream or double cream

  • 60g butter (salted)

  • 400g fettuccine

  • 100g parmesan cheese (grated)

  • ½ tsp of salt & pepper

  • 1 small onion (diced)

  • 1 carrot (julienned)

Directions

  • Fill your pot with water and salt and bring it to a boil. Once boiling, add the fettuccine and let it boil for about 5 minutes.
  • Drain the pot and set the fettuccine aside.
  • In a saute pan, add the butter and onion and saute for a couple minutes until the onions start to brown, then add the vegetables of your choice (I added carrot, cherry tomatoes, yellow peppers and a bit of spinach) . Let the ingredients cook for about 5 minutes, stirring occasionally.
  • Add the cream and cheese and bring the mixture to a simmer. Add the fettuccine to your pan and season with salt and pepper.
  • Serve immediately and enjoy!
