Pasta is one of those dishes that is super simple to cook and I’m sure you cook it all the time, so I wanted to give you an alternative recipe to what you usually make. It’s pretty straightforward and as my friend told me – “Now I know how the pros make pasta tasty.” – Merci!
Fettuccine Alfredo

250ml heavy cream or double cream
60g butter (salted)
400g fettuccine
100g parmesan cheese (grated)
½ tsp of salt & pepper
1 small onion (diced)
1 carrot (julienned)
Directions
- Fill your pot with water and salt and bring it to a boil. Once boiling, add the fettuccine and let it boil for about 5 minutes.
- Drain the pot and set the fettuccine aside.
- In a saute pan, add the butter and onion and saute for a couple minutes until the onions start to brown, then add the vegetables of your choice (I added carrot, cherry tomatoes, yellow peppers and a bit of spinach) . Let the ingredients cook for about 5 minutes, stirring occasionally.
- Add the cream and cheese and bring the mixture to a simmer. Add the fettuccine to your pan and season with salt and pepper.
- Serve immediately and enjoy!
