I love eating salad and, although I’m not vegetarian, I have many friends with different dietary preferences, so I’m often trying out different types of diet to push my creativity in the kitchen.
This one’s for my vegetarian friends.
Something simple and quick to put together and a complete meal on its own.
Mix Green Kale Salad

minutesThis recipe takes 5 minutes to put together if you have everything already prepared or if not then about 20 minutes.
Ingredients
70g Mixed nuts, roasted
100g Kale
100g Pea sprouts
2x Peach slices
2x handfuls shaved parmesan cheese
25g Cherry tomatoes, sliced
4x Fried tofu slices (either buy ready fried or you can buy fresh and mix with cornstarch and fry it)
60ml Sesame dressing (store bought, optional)
Directions
- Roast the nuts by putting them on a baking sheet and into the oven for 180 for 20 minutes
- Wash and drain the kale, pea sprouts and chill in the refrigerator for 5 minutes.
- In a salad bowl add the kale and pea sprouts
- Gently toss in the cherry tomatoes, tofu, peach, and shaved cheese, mixed nuts.
- Add the dressing on top of the salad and gently mix together.
