I often see blogs with really long stories about the recipe they’ve posted, and it’s cool to read it, but for me, I just like to post what I like to eat – it’s as simple as that!
I choose my recipes based on a short list of criteria:
- Is this something I LOVE to eat?
- Is it quick and easy to cook?
- Is it healthy?
And a bonus one – is it easy to pair with multiple different things?
When cooking is not complicated, you’ll find yourself preferring your own food instead of eating out, and families sharing food together is something I love to encourage.

Oven Grilled Chicken Breast

500g chicken breast (approx 4 pieces)
A pinch of salt and black pepper
2-3 cloves of garlic chopped
A tablespoon lemon juice
2 branches of fresh thyme
A handful of fresh basil
A handful of Italian parsley
2 branches of fresh oregano
60ml of liquid honey
4x fresh peaches (not canned) cut into wedges (optional)
A tablespoon of paprika
Directions
- Grab a mixing bowl and fill it with water. Clean the chicken breasts and pat dry with kitchen paper towels.
- Blend together the herbs and garlic in a food processor or blender, add the lemon juice, oil, and half the peaches. Cut peaches into smaller chunks if they are hard, ideally, we want them to be soft.
- Rub the mixture all over the chicken, and then place it in the fridge for 30-60 minutes.
- Preheat the oven for 10 minutes at 400F (200C), and once heated, place the chicken in a roasting pan and into the oven to roast for 45 minutes.
- In a small bowl, mix together the lemon zest and juice, oil, honey, a pinch of salt, pinch of pepper and chopped parsley and set aside for basting.
- Once the chicken is done add the final ingredients and bast for 5-10 minutes covered with aluminium foil.
- Serve with your choice of salad or vegetables.
