Pan Fried Sea Bass with Chipotle Cream Sauce

When I’m thinking up new recipes to share I’m always thinking about stay at home moms that want to make healthy meals even if they don’t have a lot of time.

It’s super fast, healthy and packed with flavour!

Pan Fried Sea Bass with Chipotle Cream Sauce

Quick tip with this recipe: Sea bass is a very fine fish (not thick like salmon) so you don’t want to overcook it as it’ll get flaky and some of the nutrients can get lost.

Ingredients

  • A drizzle of olive oil

  • A pinch of salt

  • A pinch of black pepper

  • 4 Sea bass fillets (8oz each)

  • 2 x Lemons, sliced

  • 1-2 branches of thyme

  • 1 tbsp of butter

  • 2 branches of rosemary

  • All purpose flour 60g

  • For the Chipotle Cream Sauce
  • 35g Unsalted butter

  • 10g Garlic

  • 10g Ginger

  • 200ml Cooking cream

  • 175g Chipotle cooking paste (usually half a jar)

Directions

  • Get a mixing bowl, fill it with cold water and squeeze a bit of lemon juice into the water and then wash your fish.
  • Dry the fish with kitchen paper towel.
  • Add the flour, salt and black pepper mixed together on a small plate.
  • Dip the fish into flour and set it aside.
  • Add the oil to a frying pan and turn up the heat to medium and heat for 2 seconds.
  • Fry each side of the sea bass fillet for 3 minutes.
  • Remove the fillet and keep it to one side, then, in the same pan, add the butter, thyme, garlic, ginger, rosemary, and green onion and sauté for 1 minute.
  • Add the chipotle paste and the cooking cream.
  • Season with salt, pepper and squeeze a bit of lemon onto it.
  • Let it cook for another 2 minutes.

Serving suggestions:

  • I like to eat this with spinach rice, roasted potatoes or mashed potatoes, sweet potatoes, with a salad, or you can just eat it just like that with a glass of wine.
