This is one of those recipes that you might easily dismiss as boring or difficult to make, but I’d like to challenge you on that because this recipe is very fast and easy to make if you like doing 1-pot dishes. There’s barely any thinking involved at all, grab a glass of wine and just go for it!
Potato and Leek Soup

1-2 potatoes, cubed
2x leeks, diced
3x stalks of spring onion, diced
2x branches of fresh thyme (optional)
2x branches of fresh oregano (optional)
2 tbsp of olive oil
300ml vegetable stock
200ml warm water (optional)
3 cloves of garlic, chopped
Directions
- Wash the leeks and potatoes and cut everything.
- Heat the oil in a saucepan, then add the onion, garlic, potatoes, and leek, sauté.
- Add the water, stock and thyme, oregano, cover the pot.
- Cook in a medium heat for 30 minutes.
- Use a food processor to blend the soup.
- Serve as is 🙂
A few extra tips:
- Use the whole leek for this recipe, yes even the bottom.
- Don’t skimp on herbs, that’s where the majority of the flavour will come from.
- Make a big batch and keep it on standby for a quick dinner or freeze it as a backup meal.
