Vegan Rainbow Salad

Salads are one of the simplest, easiest and healthiest dishes to make and so I had to add a vegan salad recipe to my blog. Although it was easy coming up with the recipe, I got stuck trying to name it until I was waiting to pick up my kids from school and saw a rainbow! So this recipe is dedicated to them 🙂

Ingredients

  • 35g Spinach, washed

  • 35g Red cabbage, stemmed removed

  • 35g Red pepper, chopped

  • 35g Roasted sweet potatoes, cut into cubes

  • 20g Gooseberry (or any other berry you want)

  • ½  Avocado

Directions

  • Prepare the sweet potatoes and roast them in the oven tossed lightly with a little salt and olive oil at 350F / 180C until lightly brown, roughly 30-40 minutes.
  • In the meantime, wash the spinach and chop the vegetables.
  • Once the sweet potatoes are roasted, assemble the salad by adding everything to a bowl and top with a dressing of your choice.
  • Serve as a side salad or as a light meal for one.
